Afternoon Tea Platter

01 Ingredients

  • 1long loaf of bread
  • 1vegetable of your choice, thinly sliced
  • 250gof your preferred cheese, lightly spread or thinly sliced
  • 1 bunchof your favourite herb or vegetable for garnish
  • 100-250gof any cured/smoked meat or fish

02 Instructions

  1. slice bread to 1/2 inch thickness
  2. add your favourite cheese, along with a bite sized portion of any of your chosen combinations (tip: make it colourful!)
  3. mix and match
  4. serve open faced, or covered

01 Ingredients

  • 1thin baguette (whole grain or sesame)
  • 1 cananchovies
  • 1 pintcherry tomatoes, split in half
  • 1/2 lbof peeled asparagus
  • 1small container of cream cheese

02 Instructions

  1. preheat oven to 350°F
  2. drain anchovies
  3. blanche asparagus in hot salted water for 2 minutes and place into an ice bath to let cool
  4. use a Y-peeler to go top to tail, and make 2-3 slices per spear of asparagus
  5. slice tomatoes
  6. place cream cheese at room temp
  7. slice bread place on a shallow baking sheet and toast lightly for 3-4 minutes
  8. remove bread from oven and let cool on tray
  9. smear cream cheese onto bread
  10. place 1 anchovy and one halved (but still intact) cherry tomato over cream cheese
  11. garnish with a slice of asparagus

  • 2cucumbers, sliced
  • 1loaf of quality sliced bread
  • 1/2 cupmargarine/soft butter
  • 1/2 cupof mayo
  • 1 teaspooncelery salt, lemon juice, cayenne pepper, or your favourite seasoning

02 Instructions

  1. cut cucumbers into thin slices
  2. mix margarine or butter with mayo and spice of your preference to create sandwich spread
  3. layout bread slices, trim crusts
  4. distribute spread evenly on all slices
  5. separate tops and bottoms
  6. distribute cucumber slices evenly over bottoms
  7. place tops on and slice diagonally
