Alpine Essence

01 Ingredients

  • 1 clovegarlic
  • 2 cupsdry white wine (or substitute dry white Concord grape juice)
  • 1 tbspkirsch liqueur (or substitute with non-alcoholic cherry bitters in water)
  • 1 tbspcornstarch
  • 250gGunn’s Hill Handeck cheese, grated
  • 250gOxford Harvest cheese, grated
  • 250gFive Brothers cheese, grated

02 Instructions

  1. smash garlic, rub inside ceramic or metal pot and discard
  2. add wine (or grape juice) to pot and simmer over moderate heat (do not boil)
  3. shred cheeses directly into heated pot
  4. stir cheeses gently until they blend
  5. mix kirsch (or cherry bitters and water) with cornstarch in separate bowl
  6. pour into cheese mixture and whisk with wooden spoon until smooth
  7. serve with bread over low heat

  • shaved roast beef
  • pepperettes
  • fresh, pickled, or preserved vegetables of your choice
  • any breads or gourmet crackers at hand
  • crispy apples or pears (sliced)
  • fresh grapes

02 Instructions

  1. Slice some of the cheese and meat
  2. Arrange items in colourful groups with different textures and cuts
  3. Encourage guests to mix and match to find their favourite tastes
