01 Ingredients

  • 5shiitake mushrooms, cleaned and stemmed
  • 1baguette, sliced
  • 1goat cheese log, de-skinned
  • 1 quartcherry tomatoes, chopped
  • 5 sprigsmint, chopped
  • 3purple basil leaves, de-leaved
  • 3shallots, thinly sliced
  • 1green pepper, chopped
  • 3garlic cloves, chopped and shaved
  • 5 sprigsoregano flowers
  • 3chive stocks, chopped
  • Dressed serving plate

  • 1bag of mixed greens
  • 2purple romaine hearts
  • 1handful of blueberries
  • 1cucumber, sliced

02 Instructions

  1. sauté mushrooms with butter and chopped garlic for 1 minute to bring out flavor
  2. put a thin coating of goat cheese on mushrooms
  3. place all ingredients on mushrooms
  4. add another thin layer of goat cheese
  5. spread mixed greens onto serving plate, along with the purple romaine hearts
  6. sprinkle blueberries on romaine
  7. place sliced cucumber around plate

    Mushroom Marinade

  • 4large portobello mushroom caps
  • 1/4 cup (50 mL)balsamic vinegar
  • 2 tbsp (25 mL)olive oil
  • 1/4 cup (50 mL)fresh mint, finely chopped
  • 2 tbsp (25 mL)curry powder
  • 1/2 tsp (2 mL)ground cumin
  • 1/2 tsp (2 mL)chili powder
  • 1 tsp (5 mL)salt
  • Garnish

  • 4buns
  • lettuce
  • tomatoes
  • goat cheese
  • condiments

02 Instructions

  1. whisk marinade ingredients together
  2. place mushroom caps, smooth side up, in a shallow dish
  3. pour marinade over mushrooms
  4. let mushrooms stand for 15 minutes, turning twice
  5. preheat grill to medium-high heat
  6. brush grate with oil
  7. place mushrooms on grill, reserving marinade for basting
  8. grill for 5 to 8 minutes on each side, or until tender
  9. brush with marinade frequently
