Healthy Holiday Feast

01 Ingredients

  • 1sweet onion, chopped
  • 8sundried tomatoes, sliced into slivers
  • 5-7cremini mushrooms, chopped
  • 1 clovefresh garlic, chopped
  • 2 tablespoons fresh chives, chopped
  • 2 teaspoonshot chili flakes
  • 1 whisked or 1 tablespoonchia seeds soaked in 4 tablespoons water till they turn pudding-like
  • 1 tablespoonwheat-free organic tamari sauce
  • 1/2 kiloground lean organic turkey

02 Instructions

  1. preheat oven to 350 degrees
  2. chop vegetables and set aside
  3. place ground turkey in a large bowl
  4. combine whisked egg and tamari with turkey
  5. add vegetables and spices then mix everything with hands
  6. form into balls
  7. bake for 7-9 minutes then flip them over and cook for additional 7-9 minutes
  8. enjoy on bed of arugula or something fresh and festive

  • 1organic spaghetti squash
  • 2 tablespoonsextra-virgin olive oil or organic butter
  • 1/2 teaspoonCeltic sea salt
  • pinchfreshly ground black pepper
  • 1/2 cupfreshly chopped parsley
  • sprinklepecorino cheese

02 Instructions

  1. cut spaghetti squash in half lengthwise with large chef’s knife
  2. scoop out goop
  3. preheat oven to 375 degrees
  4. place 2 halves of spaghetti squash face down in large baking dish with 1/4 inch filtered water
  5. bake 50 minutes
  6. poke with fork and if not tender, cook for additional 10-15 minutes
  7. remove from oven and scrape out squash with fork
  8. pour extra virgin olive oil over top of squash, top with pecorino cheese, season with sea salt and pepper, garnish with parsley

  • 1pound fresh cranberries
  • 2 cupswater (for extra sweetness, replace some water with orange juice)
  • 2 tablespoonsmaple syrup, coconut sugar or another natural sweetener
  • 2 tablespoonschia seeds
  • 1/4 teaspoonginger zest
  • 1 teaspoonorange zest

02 Instructions

  1. discard soft and rotten cranberries, wash the rest
  2. stir water and sugar in saucepan on medium heat until sugar is dissolved
  3. add cranberries to saucepan, bring to a boil and then turn down to a simmer for 10 minutes - cranberries will start popping
  4. add chia seeds and continue to stir on low heat for additional 10-20 minutes
  5. add more chia, 1 teaspoon at a time, to thicken to your liking
  6. let cool and serve
