Morning Masterpiece

01 Ingredients

  • 4ripe avocados
  • 2limes (juice and zest)
  • 1 smallshallot or 2 tbsp. of very small diced red onion
  • 1clove garlic
  • 1 tsp.salt
  • ½a seeded jalapeño for the heat seeker (optional)
  • ½tomato (seeds removed), diced small

02 Instructions

  1. peel and de-seed the avocado and empty into prep bowl
  2. zest limes with a microplane rasp or other fine zester, cut in half and squeeze juice
  3. zest onion and garlic and add into prep bowl
  4. add salt and zested jalapeño if desired
  5. with the back end of a fork, mash ingredients together until desired consistency is achieved
  6. add diced tomatoes last

  • 1 dozenlarge tortilla shells
  • 4eggs
  • 1/2 cupmilk
  • 3/4 cupvegetable or grapeseed oil
  • 1 red and 1 greenpepper roughly chopped
  • 1large white onion
  • 1 lbmixed small mushrooms
    (white, cremini, oyster, shimeji)
  • 2 clovesgarlic
  • 3/4 lbof Queso fresco, Quark, or Monterey jack cheese
    (can be mixed)
  • 1 canblack beans
  • 1 tbsp. Mexican oregano

02 Instructions

  1. preheat oven to 300 F. Wrap tortillas in foil and place into oven
  2. slice onions, peppers and mushrooms
  3. heat pan and add ¼ cup olive oil
  4. season, caramelize onions until medium brown and place in serving dish
  5. sauté the peppers until soft and place in another serving dish
  6. add garlic and mushrooms into pan and cook until firm
  7. rinse black beans and heat quickly either on stove top or in a microwave with 1/3 cup of water. Mash and set aside in serving bowl
  8. in a non-stick pan on medium, combine eggs and milk and stir occasionally to produce large fluffy curds
  9. remove from heat immediately
  10. season with salt and pepper to taste and add 1 tbsp oregano
